You should probably pick the most recent one, and either make sure you do it with a fast network connection, or be sure to allow plenty of time for the download.
Once you have an ISO image, you can burn it on a CD-ROM using Adaptec Toast on a Macintosh, file2cd on Windows, or cdrecord on Linux.
