一教就会

1，选不大不小约600克上下的肘子一个，洗净晾干，用火焰烧烤至肉皮略有焦糊；

2，用热水浸泡至肉皮焦糊层软化，再用刷子一一刷洗干净，直到表皮呈微黄色并略有烧香味；

3，浸入糖汁浸泡上色，糖汁以稀薄为好，浓稠则容易造成滞留在肘子表皮，一旦热油炸制，糖汁会焦糊并且颜色为发黑，甚至产生苦味；

4，下油锅将表皮炸制发干。此道工序一是保证上色的成功，使糖色牢固地附着表皮并渗入其里；二是在热油的作用下将肉里的水分炸干，以增加肉的香味，同时炸制还可使脂肪的内的油份流失部份；

5，入锅加入高汤、酱油、葱姜蒜、胡椒、白糖等佐料，大火烧开后以适当的火候煨制，汤汁不要太多，以淹过肘子为度，火也不宜太小，以锅开为度；

6，待锅内汤汁自然收稠，有一定的浓度了，以一支筷子可以扎透肘子了，即捞出去掉大骨，装盘即可。

小贴士·友情提示

1，此菜最好再配以时令鲜蔬，而且最好以绿叶菜配之，一深红一碧绿，视觉上令人赏心悦目，一浓香一清淡，味觉上也是极合适的。

2，此菜属量大份足型，如果一餐未吃完，下顿除须返锅加热以外，还可改刀切成薄片，作凉菜佐酒，也是别有风味的，且算一菜二吃。

东坡肘子还不能烧得太烂，烧得太烂一是不容易成型，应该在抽掉大骨后放在盘中还能保持肘子原状而不会扭曲变形；烧得太烂脂肪部份还容易腻口糊嘴，而瘦肉也不会有嫩的口感。东坡肘子之所以肥而不腻，一是生肘子用明火烧烤时去除了一些油，二是上糖色后下油锅炸去了一部份油，三就是在烹饪过程中，肥肉里面的油脂有相当部份被煮化而流入汤汁中了。所以好苗条的女士也是可以品尝这道名人佳肴的。

When the aerials are down, and your spirit is covered with snows of cynicism and the ice of pessimism, then you are grown old, even at 20, but as long as your aerials are up, to catch waves of optimism, there is hope you may die young at 80.
